Natalie's Collagen Smoked Chicken Pasta

Ingredients:

1 Smoked chicken breast cut into cubes

4 streaky Bacon slices cut in smaller pieces to cook

150gm Penne Pasta

1 Courgette halved longways and sliced

A handful of Broccoli Florets cut into small florets

2-3 Mushrooms sliced

¼ cut White wine

Fresh Alfredo Sauce pot

1 Scoop unflavoured Collagen Powder

100gm Basil Pesto

Fresh grated Parmesan Cheese

 

Method:

Cook pasta according to pack directions

Heat pan and cook bacon, remove from the pan, drain most of the fat off, add a small pour of olive oil to cook the Chicken for 2-3 mins

add Courgette, then Mushroom and Broccoli, cook vegetable for a further 5 mins on medium heat and keep turning, add wine and allow it to reduce by half

Add Pesto and stir through, set aside a small amount of Alfredo sauce and mix in the Collagen powder until smooth, add this and the rest of the sauce to the pan

Allow to lightly simmer for a further 4 mins. Add drained pasta and mix through. Mix through half Grated Parmesan and use the rest for garnish
